It’s a big brisk this Meatless Monday so I thought I’d go for some comfort food.
If you want this to be vegan * be sure to check your soy protein mince substitute does not contain egg white powder. There are a few vegan ones available like Fry’s & Redwood.
Sprinkle half 400g vegetarian mince in an oven dish. Slice 1 onion, 1/2 a pepper, a few mushrooms, and a clove of garlic into small bits and mix in with the mince. Sprinkle with salt, pepper and Worcestershire sauce. Stir around and put in the oven on 180/375.
Boil 5 medium potatoes (leave the skin on for texture and just wash well). Mash using soy milk and bit of mayonnaise or veganaise and flavour with some salt & pepper. You can also stir in some chives.
Take the pan out of the oven and pour 1 can of corn over the top. In the winter I usually make a cream style corn by warming the corn on the stove top first; mashing and thickening with some soy cream and a bit of corn starch, but in the summer I just pour the corn in straight from the can.
Spread the potatoes around the top evenly and pop back into the oven for about a half hour.
Sometimes I sprinkle something over the top like breadcrumbs (can get gluten free bread crumbs at a whole foods shop to keep it gluten free), fried onions or cheese (no longer vegan). I serve with ketchup, bbq sauce and hot sauce.
