With the bank holiday today and the sun shining I thought I’d do a meatless Monday post for the BBQ season!
Here’s a quick & easy “burger” even a carnivore will love:
A big crusty roll toasted on the grill and spread with your favourite store bought pesto (loads of versions made with cashews for the vegan contingent).
Portobello mushroom brushed with olive oil, cooked on the grill until shiny & soft (this will take longer than pretty much all the meat).
Whole red pepper roasted straight on the flame – just pull the stalk out when its done and use 1/3 per burger, it’s ok for the outside to get a bit blackened.
That’s your burger done for the vegans but for the vegetarians cook up a few slices of halloumi cheese straight on the grill and pop those on top too!
For the vegans you can serve it with kale salad, or beetroot & carrot salad, or a vegetarian favourite – hearty potato salad:
Boiled potatoes & egg flavoured with lots of mayonnaise, some celery salt, pepper, a whole bunch of spring onion and the secret ingredient; a big splash of the brine from a jar of sour gherkins (pickles)!
There’s your meatless Monday BBQ sorted.
