I have served these to many a meat eater who barely noticed the difference from the original PF Changs’ version. Super fresh & light for this scorcher of a day. Half of our bbq grill is a flat surface so we often just make them outside as well.
Will serve 2 for a main or 4 for a starter.
Put the kettle on for water to cover the vermicelli noodles.
Gently tear off leave of iceberg lettuce head, wash and leave on the table for serving.
For the spicy serving sauce just mix 4 teaspoons yellow spicy english mustard (colemans or similar) with 4 tablespoons water until smooth then mix in 4 teaspoons each of rice vinegar, soy sauce & sweet chili sauce. Leave on the table with a small spoon for serving.
Put 200g (half of a normal sized pack) of rice vermicelli noodles in a large baking dish & cover in boiling water. Top up with tap water if necessary to make sure all noodles are covered and leave to the side, checking occasionally to see when they’re done (should be about 5-7 minutes). Once they are al dente, drain and leave them on the table for serving.
Cut a 400g pack of tofu into bite sized square and brown in a dry tefal pan on each side
Meanwhile mix up the marinade for the tofu;
2 teaspoons cornstartch
- 2 teaspoons sweet chili sauce
- 4 teaspoons dry sherry
- 4 teaspoons water
- 4 teaspoons soy sauce
Once the tofu is done dump it in the marinade and let it sit for 15 minutes.
While you wait mix up the cooking sauce:
- 2 tablespoons hoisin sauce
- 2 tablespoons dry sherry
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 4 tablespoons water
- 2 teaspoons sesame oil
- 2 teaspoons sugar
- 4 teaspoons cornstartch
Now put 1 tablespoon of sesame oil in a frying pan on medium heat and fry 4 cloves of minced garlic, 1 tablespoon minced ginger, 1/2 a diced red onion, and 4 sliced spring onions. Once they’re almost soft add a small can each of diced bamboo shoots & water chestnuts. Then dump in the tofu with any remaining marinade sauce and cook over medium heat slowly adding the cooking sauce until it’s all absorbed.
To eat just grab a piece of lettuce, put some vermicelli noodles on it, top with tofu mixture and as much spicy sauce as you like and shove it in…. enjoy!
